Some recipes will be from my meal plan, some will be things I want to try.  I’ll let you know which one each is.  Let me know what you think.

Bacon Wrapped Pork Roast
(From the $5 Dinner Mom Cookbook)
I doubled this and used the leftover pork to make pulled-pork sandwiches.  It was really good and the boys said that I should make it again.
Ingredients
1 pork shoulder roast – 1- 1 1/2 lbs
1 heaping raspberry or apricot jelly
2 strips of bacon, cut in half crosswise
1 TBSP olive oil
Preparation
Spray slow cooker with spray. Place pork roast in slow cooker. Spread jelly over roast. Lay bacon over jelly. Cook on low for 8 hours. Remove from slow cooker and let cool 10 minutes.
Cherry Preserves  – this was amazing!
